The need for developing culinary skills in high school was addressed in one school by having students create a bistro on campus.
Planning the bistro was a lesson that Chef Kathleen Roussel was eager to teach her students, who designed the Bistro Urbano at Clear Creek High School
The program covers all aspects of culinary arts, including restaurant management and basic skills
“They learn everything from basic knife cuts and stocks to cuisines from all around the world,” said Chef R0ussel.
Students will come from the entire district, not only Clear Creek. Originally, a kitchen was adjacent to the classroom, but Roussel wanted to give her students more opportunities. She asked her students to research other schools that had culinary arts programs with restaurants on site, and then design their own.
“I thought it would be a great experience to have a restaurant,” she said. “We want to prepare students for the real world as much as possible.”
